Avocado and caprese. You cannot not like either of the two, which have the world swooning. Now think of a treat that marries both — that’s right! We just put your two favourite flavours in one bite, and trust us, you won’t get enough of it once you make it.

From The Pantry:
2 ripe avocados
2 teaspoons fresh lemon juice
4 slices of bread
115 grams fresh mozzarella, sliced to fit the bread
1 cup grape tomatoes, halved
¼ cup basil leaves, roughly chopped
Sea salt and black pepper, to taste
Balsamic glaze (for drizzling)
½ cup Balsamic Vinegar
5 tablespoons brown sugar
Cook Away:
For the balsamic glaze, mix balsamic vinegar and brown sugar in a saucepan over medium heat. Stir constantly until the sugar dissolves. Bring to a boil, then reduce heat to low, and simmer until glaze is reduced by half, in about 20 minutes.
Glaze should coat the back of a spoon. Let it cool and pour into a closed container; store in refrigerator to be used later.
Cut the avocados in half, remove pit, and scoop the flesh into a small bowl.
Add the lemon juice, sea salt, and black pepper to the bowl. Use a fork to mash the ingredients together, keeping the texture slightly chunky.
Toast the bread and spread the mashed avocado mix evenly onto the slices.
Top with fresh mozzarella slices, tomatoes, and basil. Season with additional salt and pepper, as desired.
Drizzle balsamic glaze on top and serve immediately.
