From The Pantry:
900 ml chicken stock
175 grams boneless, skinless chicken breast
1 garlic clove, chopped
1 teaspoon fresh root ginger, chopped
50 grams rice noodles
2-3 mushrooms, thinly sliced
2 spring onions, shredded
2 teaspoon soy sauce
1 lemon wedge
Fresh coriander leaves for garnish
Cook Away:
Pour chicken stock in a large pan and add chicken, garlic and ginger. Bring to boil and reduce the heat to semi-low. Cover and simmer till the chicken is cooked, about 20 minutes.
Remove the cooked chicken breast on a wooden board and shred into bite-sized pieces.
Return the chicken to the stock along with noodles, mushrooms and spring onions. Pour soy sauce from top and cook for 3-4 minutes until the noodles are ready.
Garnish with a squeeze of lemon juice and fresh coriander.
The soup is now ready to mirror your feelings and fill your tummy!
