Simple in concept yet delicious to behold, Mishti Doi is an indigenous treat that can be found at your nearest dairy or halwai. However it is best enjoyed when prepared in abundance at home for friends and family.
Prep Time: 30 minutes + Overnight incubation
Caters To: 4 gobblers
Challenge Level: Beginner
From the Pantry:
1 litre full cream milk
8 tablespoons of sugar
2 tablespoons water
1 tablespoon of dahi
Cook Away:
Add milk and 4 tablespoons of sugar into a pan and boil on simmer till the milk is reduced to half.
While the milk is being reduced, add the remaining 4 tablespoons of sugar to water in a flat pan and melt the sugar over a medium flame till the mix is golden brown.
Add the molten sugar to the reduced milk and boil for an additional 15 minutes on simmer.
Take the pan off the stove and let it cool down to room temperature.
Once cooled, transfer the mix into an earthen pot and add dahi. Do not mix or stir.
Set the pot aside to incubate overnight in a cool dry place.
Refrigerate once the mishti doi has set.
Best served cold.
