From the Pantry:
1 tablespoon olive oil
3 sausages
400 grams diced tomatoes
230 grams tomato sauce
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes, optional
1/4 cup freshly grated Parmesan
2 tablespoons chopped fresh parsley leaves
230 grams farfalle pasta
Kosher salt and freshly ground black pepper, to taste
1 cup shredded mozzarella cheese
1 cup ricotta cheese
Cook Away
Take a large pan and heat olive oil. Add the sausage and cook for about 5 minutes, until it is brown and crumbling. Drain the excess fat.
Add the garlic powder, basil, oregano, tomatoes, tomato sauce and red pepper flakes. Season with salt and pepper.
Let the mix simmer and stir in water and pasta. Bring it to a boil and cover the pan, reduce the heat & let it simmer till the pasta is cooked, about 15 minutes.
Take the pan off the heat, add parmesan and mozzarella. Mix well and top with small scoops of ricotta, cover the pot again and let it sit till the cheese melts in.
