Keep your company guessing ‘how does (s)he do it?’ with Prawn Cocktail Canapés, which are as fancy as they are tasty.

From The Pantry:
Cocktail sauce:
2 tablespoons mayonnaise
1 tablespoon greek yoghurt
60 ml tomato ketchup
1 tablespoon lemon juice
Salt and pepper to taste
Canapé:
Iceberg lettuce
18 small prawns, peeled, deveined and cooked
18 parsley leaves
Cook Away:
Whisk together mayonnaise, greek yoghurt, ketchup and lemon juice to create a cocktail sauce in a small glass bowl. Season with salt and pepper to taste.
Tear the iceberg leaves carefully to get 18 cup like leaves that can hold the canapés.
To serve, add a cooked prawn, cocktail sauce and garnish with parsley leaves.
Serve alongside lemon wedges as a pass-down hors devours!
