From The Pantry:
2 large eggs
1 garlic clove, crushed
1/2 teaspoon fresh parsley, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup breadcrumbs
1/2 cup parmesan cheese, grated
4 chicken cutlets, pounded to uniform thickness
4 tablespoon olive oil
4 lime wedges for garnish
Cook Away:
In a wide shallow bowl, beat eggs with garlic, parsley, salt and pepper. Keep aside until needed.
In a separate wide shallow bowl, mix breadcrumbs and parmesan.
Dip each chicken cutlet, first in the egg mixture and then covering with breadcrumbs completely.
In a large nonstick skillet, heat 1 tablespoon olive oil (for each cutlet) and turn the heat to medium-low. Cook the cutlets until golden brown, turning after about 3 minutes, ensuring its cooked through.
Garnish with fresh parsley and serve piping hot with lime wedges on the side.
