From The Pantry:
Oil as per requirement
250 grams cottage cheese, cut into 1/2 cm cubes
1/2 cup ghee
200 grams sugar
6 cups water
40 grams fresh coconut, chopped
70 grams almonds, peeled
70 grams, raisins
6 green cardamoms, crushed
1/2 teaspoon saffron, soaked in 2 teaspoons warm water
Cook Away:
In a wok heat oil and deep-fry the cottage cheese. Remove from wok and keep aside.
In a saucepan boil water and sugar till sugar is almost completely dissolved. Add cottage cheese and boil for additional 5 minutes.
In a separate pan, add 1 tablespoon oil and lightly fry coconut and almonds, for 2 – 3 minutes.
Add the cottage cheese with the sugar syrup, raisins, cardamom and saffron extract to the pan. Boil for another 3 minutes.
Remove from heat and allow the mixture to cool till room temperature.
Serve and follow it up with a warm cup of kehwa for the perfect evening
