Challenge Level: Beginner
From The Pantry:
3/4 cup olive oil, plus more for drizzling
8 garlic cloves, 4 thinly sliced and 4 minced
1 cup water
340 grams spaghetti, cooked al dente
Salt and pepper to taste
1 lemon, zested & juiced
1 cup fresh parsley leaves
Parmesan cheese as per requirement
Cook Away:
In a large skillet heat olive oil at medium heat and add garlic slices. Cook until lightly golden, about 2 minutes and remove the garlic from pan; reserving for later use.
In the same skillet add crushed garlic and cook until the strong fragrance goes away, about 30 seconds.
Add 1 cup water (use drained pasta water if reserved) and simmer for 2 minutes.
Add pasta and cook further for 1 minute.
Remove from heat, add salt, pepper, lemon zest & juice. Stir to combine.
Garnish with pre-prepared garlic slices, fresh parsley leaves and parmesan cheese.
