Granita is the perfect way to use all the leftover red wine from last night’s party and the strawberries you hauled for it (we know everyone was too busy chugging to appreciate your fruit platter). Effortless and delicious, it is what you need to de-stress; forking through ice is oddly relaxing. So no need to w(h)ine because our foolproof granita recipe has got your back, to get you out of this jam!

From The Pantry:
500 grams strawberries, hulled & halved
100 grams castor sugar
400 ml fruity red wine
1/2 lemon, juiced
Fresh Basil
Cook Away:
Add strawberries, sugar and red wine to a saucepan. Leave undisturbed for 30 minutes.
Gently cook the mixture at lowest heat, stirring continuously until sugar is dissolved.
Blend the mixture until smooth and pass through a sieve.
Allow the mixture to cool until it reaches room temperature.
Stir in lemon juice and freeze in a metal bowl.
Remove the granita every 20 minutes and scratch with a fork before returning to refrigerator.
Once the correct texture is reached, garnish with fresh basil leaves in glasses.
