The Thali Tradition is a celebration of the original chef’s tasting. This annual festival by DSSC continues to showcase regional Indian cuisines through the thali, which is the perfect balance of sweet, sour, bitter, astringent, and salty. After a successful first edition in 2018, this year, DSSC presents a grander, culturally-richer, immersive experience from Friday, November 1 to Sunday, November 3, 2019. The Thali Tradition 2019 will be housed at a pop-up in Jor Bagh – DSSC Bhavan, an ode to the State Bhavans in New Delhi. This is the first time for a pop-up concept like this to be hosted in India.
DSSC Bhavan is a home where Delhi can celebrate the authentic, explore the local, and revel in the vibrancy of India. At the DSSC Bhavan, renowned chefs will create 6 regional Indian thalis, and diners will experience communal dining, wherein each curated service will immerse them in indigenous traditions, art, science, and not to mention, bite-sized memories.
There are 7 chefs on board who have crafted authentic and unique thalis, that have no match anywhere else in the country!
The Thali Tradition will kick off with an exquisite Bengali Thali by Chef Megha Kohli, Executive Chef, Lavaash by Saby. Saturday afternoon will see Chef Ritu Dalmia, the culinary queen behind DIVA Restaurants, go back to her roots to craft a Marwari Thali. The dinner service will showcase an authentic Assamese Thali by Chef Megha Agarwal, as well as a Parsi Thali by Chefs Kainaz Contractor and Rahul Dua of Rustom’s Parsi Bhonu. Sunday will begin with Marut Sikka’s Punjabi Thali that will showcase authentic dishes from Amritsar, Jalandhar, Patiala and The Grand Trunk Road. The festival finale will see Chef Rahul Gomes Pereira aka Chef Picu of Jamun translate Andhra Pradesh’s rich cultural heritage onto a thali.
