Named after the Sanskrit word for “wind,” it’s inspired by the thought that the wind was India’s first and most ancient traveller, flowing across coastlines, mountains, plains, and deserts, long before people and highways.
Conceptualised from the idea that the wind carries ingredients, techniques, and flavour memories from one corner of the country to another, Vayu is a unique bridge between time, history, geography, and culinary traditions.

The menu at Vayu isn’t so much influenced by different parts of the country as it is a collection of souvenirs brought home by an adventurous traveller. Ingredients, techniques, and flavour profiles are gathered and then assembled into dishes that marry the modern with the ancient.
A Chicken and Garlic Rasam blends a long lineage of peppery tonics from the South with the contemporary spin of chicken medu vada. The Bombay Bhel Granola compacts Bhel Puri into granola bars to create a playful breakfast-meets-street-food hybrid, while the “Bae” of Bengal Crudo brings freshness with a salmon tartare dressed in a raw mango kasundi.
Larger plates feature a Charminar Dalcha that gives a hearty nod to Hyderabad’s own culinary identity, and a Gongura Mamsaam that might recount tales of grandmothers and Andhra borderlands.
Finally, for an experimental sweet finish, the dessert section features a French toast iteration of the local Hyderabadi Apricot Delight.

Peruse The Paper Plane’s Logbook, Vayu’s cocktail programme inspired by a sense of curiosity and the nostalgic joy of launching paper planes from balconies. Each drink is a unique landing point that picks up a local ingredient or flavour memory along its flight path.
You can visit different stops on the journey, like Crimson Wind, which brings more Gongura from Andhra kitchens and Khaar Coast with a murabba that’s reminiscent of raw mangoes plucked from backyard trees. Kokum Cloud lands somewhere along the coast, with a frothy finishing of tonka foam. Fiery and complex, the Scarlet Gust makes for a more impactful landing.
Together, the programme reads less like a cocktail menu and more like an itinerary that’s worth working your way through, in full.

Perched above the city at Courtyard by Marriott Hyderabad, the rooftop is designed to move through the rhythm of the day with a breezy ease, rather than against it. The spatial planning is considered and offers intimate corners and a bar anchoring the room, making it work well for after-work drinks, a long dinner, or a late night with friends that was unplanned. It’s the sort of versatility that’s usually difficult for rooftops to accommodate.
Stay long enough and the space evolves into a lively social hub for the city’s creatively inclined and culturally curious communities to converge. The music follows suit, providing a non-intrusive ambience early in the evening, and gradually finding its energy as the night progresses. Vayu is a rare restaurant where the concept doesn’t outpace the execution. The food is diverse, the cocktails are well-traveled, and the rooftop gives the whole experience room to breathe. For a city that knows how to have a good evening, it’s a visit-worthy addition to the rotation.
